Awesome sauce! Great on enchiladas, tacos, pasta, gyros and for dipping!

Directions
Cook time sauce 20-25 minutes Cook time pork 5 hours
Instructions for sauce: Pour packed 1/2 cup of spinach into blender.
Add all the rest of the ingredients on top of the spinach and blend/puree till smooth.
Place the sauce mixture in a medium saucepan on medium high heat. Bring to a boil, reduce heat and simmer for about 15-20 minutes till sauce thickens to desired consistency.
Instructions for pork: Place 4 cups chicken broth in a slow cooker and add meat. Cook pork till meat is fall apart tender, about 5 hours. When meat is cool enough to work with, carefully shred.
Assembly: Preheat oven to 350 degrees, In a large baking dish tightly roll shredded pork enchiladas placing them side by side, seam side down. Pour green enchilada sauce over the top then sprinkle with cheese and a sprinkle of green onions.
Bake for 15 minutes or until cheese is melted.
